Banh Mi Tacos

We were watching "Diners Drive-Ins and Dives" the other night and one of the segments featured banh mi tacos. I love Banh Mi! I love tacos! SOLD!!! I knew I had to make my version... and SOON! Absolutely yummy!

I was planning to use fresh jalapenos as one of the toppings, but then I thought the pickled jalapenos would work better. I'm glad I went that route. They gave it that acid that it needed.




For the chicken

1 lb Chicken breast
2 TBLSP Oyster Sauce
2 TBLSP Soy Sauce 
2 cloves Garlic, minced
1  TBLSP minced ginger
1 TBLSP Brown Sugar



For the toppings
2 Carrots, jullienned
3 inch piece Daikon, julienned (if you can't find daikon, use radish)
2 Scallions, sliced on the diagonal
1/2 Cucumber, sliced or julienned
1/2 Red Pepper, sliced
1/2 cup cup pickled jalapenos
Cilantro

For the sauce

3 TBLSP Mayo
1 TBLSP Sriracha

8-12 Flour Tortillas (I used very small flour tortillas so 3 each was good for us).


Marinate the chicken in the oyster sauce, soy sauce,  garlic, ginger and brown sugar for at least 15 minutes.

Heat a skillet of medium-high heat with a little oil and cook the chicken for about 6 minutes on each side.

Set aside and let rest for few minutes before slicing.

Assemble your tacos.
