Chicken Meatball Madness
To give you an idea how old this recipe is, it was from when we saw the movie "Hancock" starring Will Smith. So we are taking 10 years ago... YIKES! When I saw those huge meatballs served up with spaghetti I started having a mad craving, My husband and I devoured them. This recipe is doubled for 4.
2 lb Ground Chicken breast
1 Egg plus 1 egg white
6 Cloves garlic, minced
3/4 Cup Minced onion
1 tsp salt
1 tsp pepper
2 TBLSP Oregano
3 TBLSP Parsley
3 TBLSP Basil
½ tsp Red Pepper flakes
1 Cup Plain dried bread crumbs (if you can’t find legal
ones, used crushed fat free saltines)
1 TBLSP Olive oil
Spaghetti sauce of your choice, homemade or legal jarred.
Combine all ingredients (except the oil and sauce) in a large
bowl. Score with your hand to divide into 4 sections. Make 3 meatballs from each section so you end up with a dozen.
Add the oil to a large nonstick skillet and heat over
medium heat. Add half the meatballs, raising the heat to between medium and
medium high heat. Brown on all sides,
transfer the meatballs to a paper towel lined plate. Repeat with the next
batch.
Add the spaghetti sauce to a pot and add the meatballs.
Cover and bring and bring to a simmer. Let cook for 30 minutes to a couple
hours. Serve over spaghetti.
