Chicken with Garlic, Roasted Red Peppers and Spinach

TBLSP Olive Oil

head of garlic or 10 cloves, peeled and sliced

15.5oz Jar of Fire roasted red peppers, chopped coarsely

Boneless Chicken breasts

Bag Baby Spinach
Salt
Pepper
Heat
the olive oil in a large skillet over medium-low heat and add the garlic. Let
cook for just 2 minutes or so until fragrant.
Add
the roasted red peppers along with the liquid.
Turn
up the heat to medium. Place the chicken breasts in the pan, sprinkle with salt
and pepper and cover with a lid. Cook for 30 minutes, flipping the chicken
breasts over once.
Remove
the chicken to a plate.
Stir
in the spinach to the pan and cook for just another 2 minutes or until the
spinach just wilts.
Top
the chicken breasts with the garlic, roasted red peppers and spinach.
Serve.
