Crispy Chicken Rolls




This is one of my very favorite creations. Delicious!!! One day I had some leftover chicken and some egg roll wrappers and thus the crispy chicken roll was born. These are always a huge hit when I bring them to parties. Some of them were even found in a certain friend's sister’s purse at the end of the night. She shall remain nameless.



2 Cups finely chopped cooked Chicken Breast
4 TBLSP Chili sauce
2 Jalapenos, seeded and chopped (if you are a glutton for punishment, keep the seeds)
10-12 Egg roll wrappers
Olive oil in a sprayer

Preheat the oven to 400.

Mix together the chicken, chili sauce and jalapenos. Spoon one heaping TBLSP of mixture onto the egg roll wrapper. Roll like a burrito.

Spray a non stick baking sheet with a little olive oil. Place the rolls on the baking sheet and spray the tops of the rolls with a little olive oil also. 

Bake at 400 degrees for 8-10 minutes on each side. They brown from the bottom so you will see the golden brown color when you flip them over.

Serve with fat free sour cream for dipping
