Oven Fried Shrimp



I've been making this shrimp this way since I started Swanking 13 years ago and it never ever disappoints! No matter how many I make there never seem to be any leftovers. It's like magic!
Oven Fried Shrimp
20-25 Large Shrimp, cleaned, tails on and butterflied
1/4 Cup flour
2 Egg whites
3/4 Cup Whole Wheat Panko
1/2 tsp Salt
1/2 tsp Pepper
Olive oil in a spray bottle
(If you don't know how to butterfly shrimp, it's very easy. Just slice the back of the shrimp where you cut to clean them, but just don't go all the way through.)
Place the flour on a sheet of wax paper and the egg whites in a bowl. Mix together the panko, salt and pepper and put the mixture on a separate sheet of wax paper.
Preheat the oven to 400 degrees.
One at a time, coat the shrimp in flour, then dip in egg whites and then in the panko mixture. Spray a non stick baking sheet with olive oil. Arrange the shrimp on the baking sheet and then spray the tops of the shrimp with olive oil as well. Bake for 15 minutes turning once. The light coating of oil allows them to lightly brown and the panko gives it a nice crunch.
Serve with cocktail sauce, store bought or make your own by blending chili sauce, horseradish and a squeeze of lemon.
