Swanksgiving menu
***************
Roasted Turkey Breast
1 Whole turkey breast
1/4 cup *spice rub
Olive oil
Remove skin from turkey breast
Add spice rub to a small bowl and add enough olive oil to make a loose paste.
Rub all over breast and inside the cavity as well
Marinate overnight in the fridge
Remove turkey 30 minutes before cooking and preheat the oven to 350
Cook until done (temperature at 170)
*Spice rub
1 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1/2 tsp garlic powder
1 1/2 tsp black pepper

Candied Yams
3 large yams or sweet potatoes
1 TBLSP Olive oil
1 Cup brown sugar
1/4 Cup water
salt/pepper to taste

Peel and cut yams into chunks. Add brown sugar and water to pot over medium. Stir until dissolved. Stir in yams. Simmer uncovered for about 25-30 minutes and then raise the heat a bit for another 10-15 minutes so the edges caramelize a bit

Bread stuffing
10 slices of bread, cubed
3 TBSP olive oil
3 Cups chopped celery
2 medium onions, chopped
3 tsp paprika
1 1/2 tsp salt
2 TBSP poultry seasoning
Non fat organic chicken stock
Add the olive oil to a large deep skillet. Add onion and celery along with paprika, salt and poultry seasong. Saute until soft. Add bread cubes and toss through. Add chicken stock and mix gently until moistened (approximately a cup depending how moist or dry you like it).
Put stuffing into a baking pan and broil for about 4-5 minutes or until top gets browned.

Cranberry sauce
1 Cup raw sugar
1 Cup Orange juice
1 12 oz package of fresh cranberries
Dissolve the sugar in the orange juice in a medium sauce pan. Stir in the cranberries. Cook until all the cranberries have popped (about 20 minutes). Transfer to bowl. It will solidify as it cools.

Broccoli with bread crumb topping
2 bunches broccoli, thick stalks removed and separated
1 TBLSP olive oil
Breadcrumbs or 1/3 sleeve fat free saltines, crushed finely in food processor
3 cloves garlic, minced
1 TBSP lemon zest
salt/pepper to taste
Steam broccoli until tender (about 5 minutes). Heat olive oil in a large skillet over medium heat. Add garlic and lemon zest and cook for 1-2 minutes until fragrant. Stir in bread crumbs adding salt and pepper. Stir until combined. Add broccoli to a baking dish, top with bread crumb mixture and place under broiler until lightly browned (about 5 minutes).

Caramelized Onion Mashed Potatoes
4 large russet potatoes
3 SP olive oil
salt
3 Vidalia onions
1 yellow onion
Preheat a large skillet over medium heat. Add olive oil. Chop Vidalia onion into small thin pieces. Add the onions and saute, stirring occasionally (This will take approx 30-40 minutes)
About 20 minutes into cooking your onions, cut potatoes into cubes, cut yellow onion into quarters. place into a pot and cover with water. Add salt to taste (I didn't measure, but I used about 5-6 tsps). (Add the salt now as the potatoes will absorb it during the cooking, not so much after!) Bring to a boil and cook for approximately 15 minutes or until the potatoes are nice and tender. Drain water and yellow onion quarters.
Mash, add the caramelized onions and serve.
