Oven Fried Chicken



This is such a staple are our house. You can cut these into bite size pieces for for nuggets and serve with dipping sauce (just cut down on the cooking time by about 10 minutes)  or serve topped with gravy, veggies and mashed potatoes.  You can also serve on a sandwich with lettuce, tomato, onion and mayo... or in a wrap with field greens and dressing (that will be our lunch tomorrow!).


4 boneless Chicken breasts, pounded to even thickness (about 6 ounces each
Salt
Pepper

1/2 cup Flour

1 Egg, beaten

1 Cup Whole Wheat Panko bread crumbs
1 tsp Paprika
1 tsp Garlic powder
1 tsp Onion powder
2 tsp dried Parsley
1 pinch of salt
A few grindings of fresh pepper


Preheat the oven to 425.

Spray a baking sheet with a little oil.

Blend the bread crumbs with the spices.

Sprinkle the chicken with salt and pepper and dredge in the flour.

Dip in egg.

Coat in bread crumbs.

Repeat with the rest of the chicken.

Arrange on baking sheet, spray the tops of the breaded chicken with a little oil

Bake for 25 minutes.

Fat per serving: Negligible
