Fried Rice



Oil spray
3 Eggs (2 yolks, 3 whites), scrambled
1 TBLSP Grapeseed oil (or Avocado oil)
1 small onion, chopped
1 clove Garlic, minced
2 Scallions, white and green parts separated
3 cups cooked rice (1 cup uncooked)
2 TBLSP light Soy sauce
1 tsp dark Soy sauce
Dash of pepper

I've been making this for years and it's become a "go-to".  It's just so easy and so good!

This part isn't traditional or authentic I know, but I usually cook my egg first in a non-stick pan in the interest of not using to much oil in the dish...

Spray a non stick pan with a tiny bit of cooking spray. Cook the egg into an omelette, set aside on a cutting board and slice into bite size pieces.

Heat your wok over high heat (or large skillet), add the oil.

Add the onions, garlic and white part of the Scallion. Cook, stirring frequently until the onion is translucent.

Add the rice, the cooked egg, the soy sauces and pepper. Stir quickly to combine.

Stir in the green parts of the scallion and serve.

This can be  served as a side or made into a main dish by adding the protein of your choice.

As a side dish it serves 4 at approximately 3.2 grams of unsaturated per serving.
