Roasted Garlic Shrimp Pasta
If you have never roasted garlic before you are in for a surprise. When garlic is roasted, it becomes soft and creamy with a mildly sweet taste. So don't let the amount of garlic scare you! It's one of my husband's favorite pasta dishes now!
4 Heads Garlic, roasted
(For the roasted
garlic: cut the bottoms off the garlic heads, wrap in foil and roast in a 400
degree oven for one hour. Let cool. Squeeze out the garlic pulp from the skin
into a bowl. Mash with a fork.)
6 TBLSP Olive oil
1 tsp Red Pepper flakes
4 Cloves Garlic,
chopped
2 tsp Dried Basil
2 tsp Dried Oregano
1/2 tsp Salt
Generous grinding of fresh Black Pepper
Generous grinding of fresh Black Pepper
12 Shrimp, cleaned and
deveined
1 lb Cooked pasta
Drizzle of Lemon
In a large deep pan
heat the oil over medium heat, add the red pepper flakes, chopped garlic, basil, oregano, salt and pepper. Add the shrimp and cook through (about 3 minutes per side).
Remove the shrimp and
set aside leaving the oil in the pan. Add the roasted garlic to the pan and mix
with the oil until combined (a minute or two). Add the cooked pasta to the
pan along with the shrimp. Mix and serve drizzled with lemon juice.
