Swanky Meat Sauce


This flavorful meat sauce is great over pasta or as part of a lasagna with fat free or Vegan cheeses. You may notice that there is no added salt in this recipe. That's because there is salt in the sausage seasoning. If you are using another brand or making your own, salt if needed. 


1 & 1/2 pounds ground Chicken breast (Note 1)

2 TBLSP Italian sausage seasoning  (Note 2)

1 tsp ground Fennel seed, optional (Note 3)


1 medium yellow Onion, finely diced

4 cloves Garlic, minced

2 Shallots, finely diced

2 (6 ounce) cans Tomato paste

1 (28 ounce) can crushed Tomatoes

1 (14 ounce) can fire roasted diced Tomatoes

1 (14 ounce) cans canned Tomato sauce

½-2/3 cup fresh Basil finely chopped

1 1/2 teaspoons dried Basil leaves

2 TBLSP fresh chopped Parsley

Fresh black Pepper

1.In a pot or Dutch oven, heat 2 TBLSPS of olive oil over medium-low heat.  Add in the chicken. with the sausage seasoning and fennel. *See Note 1

2 Stir in onion, and garlic over medium heat until the onions are softened. 

3. Stir in the tomato paste and keep stirring for about a minute or two. Keep stirring so it doesn't burn. 

4. Stir in crushed tomatoes, diced tomatoes tomato and tomato sauce, dried and fresh basil, pepper and parsley.

5. Simmer, covered, for about 1 1/2 hours, stirring occasionally.


 


Recipe Notes

1.  You can sub plant based meat alternative here. The chicken is just for the meaty texture

2. We use A.C. Legg Inc purchased from Amazon and have also used Penzey's

3. We love the extra fennel flavor. Feel free to omit it. The sausage seasoning may be just enough for you.
